Wild Dove Coffee
The story of Wild Dove Coffee started many years ago when I took a trip to Ireland.
After landing in Shannon, my wife and I ventured to a local cafe. I ordered a cup of coffee and a scone. I was amazed watching the cafe owner make my coffee. I thought to myself, "what is he doing?, Why don't they simply have a big pot of coffee ready to go?" There I watched as he ground the coffee, pulled a shot of espresso, and added hot water. I was simply amazed as he went through these steps. As we continued our Ireland vacation, everyone made coffee this way.
After returning back home to the States, I then went into Starbucks and specifically asked them to make my coffee just the way I experienced in Ireland. My specific instructions were, "Pull the shot of espresso, and add hot water." Then, the barista at Starbucks says to me, "oh you want an Americano", "It's right there on our menu board." In amazement, I laughed and my pursuit for the perfect cup of coffee accelerated.
Not too long after my visit to Ireland, I was transferred to Europe by my employer. It was in Europe where my search for excellent coffee was brought to a higher level. I visited many small cafes throughout Germany, Italy, the UK, Belgium, and Luxembourg.
After my work assignment in Europe was over, I returned to the States and struggled finding that perfect cup of coffee. I did find a couple local small cafes; but nothing in comparison to Europe. Therefore, I bought a Breville espresso machine and started to make my coffee at home. I then realized how bad "grocery store" coffee really was. Discussing my dilemma with a co-worker, he mentioned how he roasted his own coffee at home with an air popcorn maker. I was so intrigued , I purchased a small "wok-type" coffee roaster. A very primitive design, but it worked.
At last, I was pulling shots of espresso with crema to die for.
After enjoying my "home roasted" coffees for several months, I thought to myself, "I cannot be the only one looking for the perfect cup of coffee." "There must be a business model here." It was at that point in time, I did a business plan and put Wild Dove Coffee Company in motion.
Today, Wild Dove Coffee offers "Small Batch" speciality coffees from around the world. I roast from my 2KG (about four pounds at a time) drum coffee roaster. I roast using mostly my senses, sight, sound, smell, and of course, a little help from my laptop computer to keep me on track to provide a consistent taste profile.
